Happy Thanksgiving! It seems like the perfect day to join in at CatholicMom.com to share my successes and blessings, both big and small.
I am thankful for gluten-free food. Wow, that took awhile to be able to choke that out! I pouted and felt sorry for myself all summer long switching the family to gluten-free. I am thankful God gave me answers, even if they weren’t quite what I wanted to hear. This cross seemed impossible to carry, but I am thankful for it. It just took awhile!
For Turkey Day, I made several delicious desserts we can all eat—
I used this pumpkin pie recipe, using almond milk instead of regular milk. It smells delicious!
The “cookie cake” as we call it is Betty Crocker gluten-free chocolate chip cookie mix shoved into a glass baking dish. I was too lazy to make cookies!
This delicious blueberry cobbler is a recipe that Mike’s mom converted to gluten-free for me. This is my favorite!
The family get-togethers will be tricky. Do we take a chance that the turkey and ham really are gluten-free? And then there is the embarrassment I feel when keeping our food separate. I’m sure it seems like I am hoarding food! I am very willing to share, but I have to make sure someone doesn’t accidentally use a spoon from the regular food to scoop out a piece of our gluten-free food. God sure knows how to keep humbling me. Doesn’t He know I hate being different and speaking up? 🙂
“Let us come into his presence with thanksgiving; let us make a joyful noise to him with songs of praise! For the LORD is a great God….” Psalm 95:2-3
Praying for those with no home and no family, praying for peace that only our Lord can give, and thanking God with my entire heart for all He has blessed me with! Have a wonderful Thanksgiving!
